Beef Sausages with Salad & Satay

Serves 4

What You Will Need

  • 4 x Tibaldi Beef Sausages
  • 4 Asian long bread rolls
  • 1/4 cup satay sauce
  • 2 1/2 tablespoons lime juice
  • 3 lebanese cucumbers
  • 1/2 cup fresh coriander leaves
  • 1 long red chilli, halved, deseeded, thinly sliced


  1. Combine satay sauce and 1 tablespoon lime juice in a glass or ceramic dish.
  2. Using a vegetable peeler, cut cucumbers into ribbons.
  3. Place cucumber, coriander, and chilli and remaining lime juice in a bowl. Toss to combine.
  4. Heat a greased barbecue plate or chargrill over medium-high heat cook sausages.
  5. Cut rolls and generously top with cucumber mixture, sausage and satay sauce mixture.
